This are so SIMPLE, not to mention delicious!
We first had these over Christmas break with my family, and since then have had them a couple times. It's also pretty easy to incorporate left over odds and ends from your household. We used green beans, potatoes, and bell pepper, but there are SO many other combinations. Let me know in the comments other veggies or proteins you would try!
Chicken Foil Packets:
Ingredients:
2 6 oz chicken breasts (LEANER)
1 cup bell pepper (any color) (GREEN)
1 cup green beans (GREEN)
1 cup potatoes (GREEN- IF on maintenance)
Sauce:
2 TBS light ranch (CONDIMENT)
1 tsp Worcestershire Sauce (CONDIMENT)
1/4 tsp salt (CONDIMENT)
1/4 tsp pepper (CONDIMENT)
1 tsp lemon juice (CONDIMENT)
1 tsp olive oil (HEALTHY FAT)
Instructions:
1. Preheat oven to 375 degrees.
2. Trim the fat from the chicken (and trim down to 6 oz. each)
3. Chop the veggies.
4. Mix all sauce ingredients together in a separate bowl
5. In each foil packet place 1 chicken breast, 1/2 cup of green beans, 1/2 cup of bell pepper, and 1/2 cup of broccoli.
6. Drizzle half of the sauce over each chicken breast and veggies.
7. Fold the foil so all food is covered and place on a baking sheet.
8. Bake for 40 minutes.
