Italian Spaghetti and Meatballs

Can you think of anything else that could be more comforting than a bowl of spaghetti and meatballs? No? Me either! This has become a favorite in our household and it doesn't look like that's going to change any time soon. Simple, delicious... What more could you ask for??





For the spaghetti noodles you will need to do the following:


1. Slice your spaghetti squash in half long ways and scrape out the seeds into the trash.

2. Coat the inside of the halves with about 2 tsp of olive oil and salt and pepper to taste.

3. Place the halves face down on a parchment paper covered baking sheet and.

4. Bake at 425 degrees for 30-40 minutes.

5. Scrape the inside of the squash to male noodles.


For the Spaghetti and Meatballs recipe:


Ingredients:

1 Spaghetti Squash made into noodles

1 lb 98 % or more lean ground turkey

3 TBS egg beaters

1/4 tsp garlic powder

1/4 tsp pepper

1/4 tsp salt

3 TBS Parmesan cheese



Instructions:


1. Preheat the oven to 350 degrees,

2. Place the ground turkey, egg beaters, spices, and Parmesan cheese into a bowl.

3. Combine everything with your hands and shape the mixture into meatballs

4. Place the formed meatballs onto a foil lined cookie sheet and bake for 20 minutes.

5. To assemble 1 full lean and green,: place 1 cup of scraped spaghetti squash noodles onto a plate and top with 4 meatballs and 1/4 cup of Raos Marinara sauce.


This meatball recipe yields 2 servings and each serving equals:

1 Lean | 3 Green | 3 Condiments
