Mmmm... Can you smell that? It's the intoxicating smell of Nachos.. but not just any Nachos.
As a full on Cheese Addict, I found that I NEEDED a healthy nacho recipe in my life. I live in Texas, for goodness sake, home of the best Mexican food (I may be biased) out there! OK, OK -- so Nachos aren't the most authentic Mexican food out there, but it sure sends my taste buds on a whirlwind just the same.
After realizing how UN-healthy most nacho recipes are, I set out to find the best way to fix that issue! Below is the recipe I have come up with!

Mini Bell Pepper Nacho Recipe
Ingredients:
1.5 cups worth of mini bell peppers
6 oz. 98% lean or more ground turkey
1/4 cup of reduced fat/fat free Mexican blend cheese
1 tsp low sodium taco seasoning
1 TBS sour cream/Greek Yogurt
Instructions:
1. Preheat oven to 350 degrees.
2. Slice mini bell peppers in half long ways and remove the seeds.
3. In a skillet, brown up the ground turkey. Then add in the taco seasoning and combine.
4. Arrange the bell pepper halves face up on a parchment paper covered baking sheet.
5. Fill the bell peppers with the ground turkey and top with 1/4 cup of cheese.
6. Bake in the oven for 5-8 minutes (until the cheese is melted.)
7. Top with sour cream/ Greek yogurt and enjoy! :)
