Tater-Tot Casserole

If you grew up like me, you were most definitely eating Tater Tot casserole more than a few times a month. It's a favorite.... well was, until I discovered it wasn't all that healthy, AT ALL! After being on my journey to Optimal Health for more than a year, I was really missing this comfort food from my childhood. After many hours with my condiments list, Optavia Guide, and Momma's recipe, I did it! I was able to make this baby Lean and Green approved. Here is what I cam up with!


Tater-Tot Casserole:


Ingredients:

4 cups riced cauliflower

1 lb 96% lean ground beef

2 cups green beans

1/4 cup diced onions

2 tsp Worcestershire Sauce

2 cups Cheddar Cheese

1/2 cup sour cream

2 tsp minced garlic


Instructions:

1.Preheat oven to 375 F.

2. Lightly grease an 8 or 9-inch baking dish with cooking spray. Set aside.

3. Brown the ground beef in a large skillet over medium-high heat. Drain excess fat.

4.Add the onions to the skillet and sauté for 4 to 5 minutes until translucent.

5. Add the garlic and cook, stirring frequently, for an additional minute.

6. Stir in Worcestershire sauce.

7. Transfer ground beef mixture to the prepared baking dish and spread evenly.

8. Top with Light SOur Cream followed by green beans, followed by the cheddar cheese.

9. Brown Cauliflower rice for a few minutes in skillet that meat was browned in.

10. Finally, top casserole with browned cauliflower rice.

11. Bake for 35 to 40 minutes or until tater tots are golden brown and cheese is melted.
